Expressing the Savoyard terroir, local plants, hay, smoked products, dairy products, fish from the Alpine lakes.
In the surrounding mountains, nature offers a large choice of flavors, hogweed, meadowsweet, sweet clover, wild sorrel, wild rose, or even elderberry and lovage.
Some citrus notes to give an additional relief by finding perfumes which are associated with its Catalan roots.
Which bring to express the personality of each dish.
